Baked Haddock with Lobster Stuffing! Ecstatic!


I got some gorgeous Haddock the other day locally and since we had 2 leftover lobsters from a Lobster dinner, I decided to meld them together for a positively ecstatic offering of Lobster Baked Stuffed Haddock for a fantastic dinner!

Baked Haddock with Lobster Stuffing
Serves 4
2 cooked lobsters shucked and chopped
1/1/4 - 11/2 lbs Fresh Haddock
1/2 sleeve crushed ritz cracker crumbs
1/2 onion
1/4 green pepper
olive oil and melted butter
1/4 c. marsala wine or white wine
chopped parsley for garnish

Saute chopped onion and green pepper in olive oil and butter combination till onion is clear, add chopped lobster meat and wine. Toss and cook slightly. Place Haddock Filets on greased glass baking pan, then spoon lobster on top. Sprinkle with crushed Ritz crackers and pour some drizzled butter over the top and bake for 25 min in 350 degree oven! 

I served the baked stuffed Lobster Haddock with fresh Butternut Squash grown in my garden and garnished with fresh chives and an onion rice pilaf garnished with fresh parsley!
